Cut your spaghetti squash in half and remove the seeds.
Roast on 350F for about 25 minutes or until it is soft. Scoop the contents out.
Cook your chicken in a pan with salt and pepper and set aside.
Saute all veggies with salt and pepper briefly.
Mix your chicken, veggies, squash, garlic and parm together.
Mix in Italian seasoning and lemon zest.
Add it back to the shells.
Top with cheese and bake.
Garnish with parsley if you would like.
