Protein Strawberry Shortcake

 ¼ cup sliced strawberries
 1 packet of stevia or splenda
 ¼ cup unsweetened almond milk
 5 tbsp almond flour
 1 egg yolk
 ½ tsp baking powder
 ¼ tsp vanilla extraxt
 1 scoop vanilla protein powder

Mix your almond milk, egg yolk, almond flour, baking powder, vanilla and protein powder.

Spray a mug with non-stick cooking spray and pour the batter in. Microwave for 90 seconds. If the center is not set microwave for an additional 30 seconds.

Sweeten your berries with the sweetener and top the cake with them. You can garnish with cool whip if desired.
