PSL Chia Pudding

 2 cups almond milk
 ½ cup chia seeds
 4 tbsp. sugar free maple syrup
 ¼ cup pumpkin puree
 1 tsp. pumpkin pie spice
 1 tsp. vanilla
 Topping:
 1 tbsp. instant coffee
 1 tbsp. Splenda
 1 tbsp. hot water

Mix your chia seeds. milk, syrup, pumpkin, spice and vanilla. Allow to set up in the fridge at least 4 hours.

When you are ready to eat it make the topping. Dissolve the coffee and Splenda in the water. Beat the mixture with a hand mixer or milk frother until it gets to a whip cream consistency.

Top the pudding with the coffee foam.
