Separate your egg whites from your yolks.
Mix your pumpkin, oat flour (you can make oat flour by putting oats in your food processor), milk, protein, vanilla, baking powder and salt.
Stir mixture well.
Beat your egg whites until they form stiff peaks.
Gently fold them into your batter, trying not to lose the air you have incorporated.
Cook pancakes on each side until they are done in the middle.
This will make 12 small pancakes.
