 1 cup oat flour
 ½ cup coconut flour
 ½ cup vanilla protein powder
  cup pumpkin puree
 2 tsp pumpkin pie spice
  cup cashew butter
 ½ cup sugar free maple syrup
 2 tsp vanilla
 ½ tsp salt
 ¼ cup sugar free dry vanilla pudding mix
 almond milk if needed to thin mixture

Combine all ingredients in a food processor or stand mixer, except pudding mix.

Add almond milk if the dough is too stiff.

Roll into 24 balls and coat in pudding mix.

Store in the fridge.
