 1.50 lb. lean beef roast
 1 tsp. olive oil
 ½ cup green olives
 1 chopped onion
 1 diced red bell pepper
 2 tbsp. minced garlic
 1 tbsp. oregano
 1 tbsp. paprika
 1 tsp. allspice
 28 oz. can crushed tomatoes
 2 cups prepared cauliflower rice
 1 tbsp. fresh cilantro

Season your roast well with salt and pepper.

Sear in the olive oil until brown on each side.

Add all ingredients in a crock pot and cook on high 6 hours or until meat is falling apart. You can also roast in a pan until tender.

Serve over the cauliflower rice.
