Salmon Salad

 1 lb. salmon filet (cooked and cooled)
 1 red bell pepper, diced
 ¼ cup sliced green onions
 2 hard boiled eggs (diced)
 2 tbsp. chopped parsley
 2 tbsp. low fat mayo
 3 tbsp. plain non-fat Greek yogurt
 juice of 1/2 lemon
 ¼ tsp. black pepper
 2 tsp. Dijon mustard

Take a fork and flake your salmon into small pieces.

Add your diced bell pepper, green onions, diced hard boiled eggs, parsley and pepper.

Mix the mayo, yogurt, lemon juice and mustard to make your dressing.

Lightly toss the salmon mixture with your dressing. Chill and serve.
