Shaved Brusell Sprout Salad

Yields8 Servings

 4 cups shaved Brussel sprouts
 ¼ cup olive oil
 2 tbsp. Dijon mustard
 3 packets of Splenda
 ¼ cup lemon juice (add the zest as well)
 ½ cup toasted pumpkin seeds
  cup dried cranberries (get the no sugar added)
  cup sliced green onions
 salt and pepper to taste

Slice your brussel sprouts very thin. I used a food processor.

Mix your oil, mustard, Splenda, and lemon juice to make the dressing. Toss your brussel sprouts with the dressing. Season with salt and pepper.

Allow to sit for a few minutes to soften the salad. Add your green onions, seeds and cranberries. Serve cold.
