In a small bowl add the zest and juice from one of your oranges, liquid aminos, ginger, garlic, honey alternative, salt and pepper.
Line a sheet pan and add your chicken and diced vegetables.
Pour marinade over the top and toss it all well.
Bake 20 to 25 minutes on 375F or until the chicken is cooked and the veggies have softened.
