Sheetpan Ginger Maple Chicken

 1.50 lbs boneless, skinless chicken
 2 medium sweet potatoes
 1 red onion
 1 lb Brussel sprouts
 1 tsp seasoning blend
 1 tsp olive oil
 3 tbsp sugar free maple syrup

Season your chicken with the seasoning rub. Dice your potatoes and onions into bite size pieces.

Cut your brussel sprouts in half and trim the ends. Salt and Pepper your veggies.

Drizzle the whole pan with the olive oil and maple syrup.

Bake at 375F until chicken is cooked and veggies are soft, mine took about 45 minutes.
