Shredded Jerk Chicken Bowl

 1 lb chicken breast
 2 tbsp jerk seasoning
 4 cups cauliflower rice
 4 sliced radishes
 1 cup pico de gallo
 ½ cup pineapple chunks
 ¼ cup chopped cilantro
 2 limes

Season your chicken with the jerk seasoning. Place it in a 9x13 pan and add 1 cup of water. Cover with foil. Bake at 300F until the chicken is tender and you can shred it. (Mine took 2 hours)

Place the cooked cauliflower rice in a bowl. Top with shredded chicken, add all other ingredients, squeeze lime juice over the bowl and enjoy.
