Cut wraps into fettucine sized slices. Separate the slices and set aside. Season your shrimp with salt and pepper. Cook shrimp until done, 3-5 minutes. Remove shrimp from pan and transfer to a bowl.
Add cottage cheese, parmesan cheese, garlic, shallots, and chicken stock to pan. Season with salt and pepper. Cook until it thickens.
Add “noodles” and shrimp back to the pan. Cook another minute or so. Garnish with parsley and more parm.
