Shrimp and “Grits”

 1 clean shrimp, coated in paprika and garlic powder
 1 bag of frozen cauliflower rice
 ½ cup almond milk
 ¼ cup cheddar cheese
 ½ tsp paprika
 salt and pepper

Add Cauliflower, milk, paprika, salt and pepper to a pan. Simmer it until it is soft, and looks like grits. Add cheese and stir until creamy. You can add extra milk if needed.

In a hot pan add olive oil. Then add shrimp. Cook quickly, browning well on both sides. Only cook until they are pink and curled.

Garnish with green onions!
