Get 4 pieces of foil, big enough to fold into packets.
Spray them lightly with nonstick cooking spray.
Add ¼ of the cauliflower rice (salt and pepper), add ¼ of the cilantro and then the shrimp. Salt and Pepper each ingredient.
Fold the packets closed and cook in the oven or on the grill for 15 minutes.
Top with the diced avocado and lime juice.
