Sicilian Stuffed Peppers

 1.50 lbs. ground chicken
 4 bell peppers
 4 cups cooked cauliflower rice
 1 cup low sugar marinara
 ¼ cup chopped onion
 2 tsp. minced garlic
 1 tsp. Italian seasoning
 2 tbsp. raisins
 ½ cup mozzarella cheese

Saute your ground chicken with your onion and garlic until cooked through.

Add your raisins, cauliflower and sauce. Fill each pepper and top with cheese.

Cover with foil and bake at 350F for 30 minutes or until pepper is soft.

Each pepper is 2 servings.
