Skinny Cashew Chicken

 1 ¼ lb. boneless skinless chicken breasts
 salt and pepper
 1 ½ tbsp sesame oil
 1 back frozen stir fry vegetables
  cup cashews
 ¼ cup soy sauce
 3 tbsp rice vinegar
 2 tbsp honey or truvia
 1 tbsp fresh grated ginger
 2 cloves minced garlic
 ¼ tsp red pepper flakes
 1 tsp corn starch

Brown your chicken in a skillet and remove.

Saute your vegetables until soft and remove.

Whisk all of your sauce ingredients and cook until thick and bubbly.

Add your chicken, vegetables, and cashews and stir.  Garnish with green onions or sesame seeds.
