Skinny Chicken Curry

 2 lbs boneless chicken
 1 lemon
 3 bell peppers
 1 cup carrots
 3 medium zucchinis
 1 chopped onion
 1 tbsp minced ginger
 1 tbsp minced garlic
 2 tbsp sriracha
 2 cans light coconut milk
 2 tsp curry powder
 ¼ cup splenda
 salt and pepper

Cut all the veggies and chicken into 1 inch pieces.

Marinate your chicken in the juice of the lemon, salt and pepper.

Cook the veggies on high heat first. Then the chicken.

Add the remaining ingredients into the pan and reduce it until it is thick.

Serve over cauliflower rice!
