Slow Cooker Vegetable Beef Soup

Yields8 Servings

 1.50 lbs lean beef roast, cut into small cubes
 2 cups mixed frozen vegetables
 1 cup frozen baby lima beans
 2 tbsp tomato paste
 1 tbsp minced garlic
 1 diced onion
 2 cups shredded cabbage
 16 oz tomato juice
 16 oz beef broth
 1 tsp salt
 1 tsp pepper
 ½ tsp Italian seasoning

Spray a skillet with non-stick cooking spray, add meat and cook until browned. Drain excess liquid.

Add all of your ingredients to the slow cooker and stir well.

Cover slow cooker and cook on low for 8-10 hours.  If your soup seems too thick you can thin it down with additional water or broth.
