In a large pot, heat olive oil over medium heat.
Saute onion, smoked sausage, radishes and corn for about 7 minutes or until the onions start to become tender. Sprinkle over flour and stir to coat.
Cook 1 minute. Pour over chicken stock, salt, pepper and bay leaves.
Stir and bring to boil, then cover and simmer gently for 10-12 minutes or until the potatoes have cooked.
Remove from heat and add in almond milk, chopped spinach and chives.
