Southwest Egg Cups

 8 oz ground turkey
 12 eggs
 1 red bell pepper
 ½ cup black beans
 ½ cup sliced green onions
 ½ tsp cumin
 ½ tsp chili powder
 1 tbsp chopped cilantro
 salt and pepper

Brown your ground turkey and allow to cool.

Get a muffin tin with 12 wells and coat it with non-stick cooking spray.

Add meat, beans and veggies to each well.

Beat your eggs with seasonings and cilantro.

Pour over each well.

Bake on 350F for 15 to 18 minutes or just until the eggs are set.
