 1 large spaghetti squash, cut in half and seeded
 2 tbsp soy sauce
 1 tbsp sriracha
 1 tbsp rice wine vinegar
 1 lb diced chicken breasts
 6 scallions, chopped
 1 clove on minced garlic
 2 tsp grated ginger
 1 carrot, shredded
 1 bell pepper, diced
 1 cup snow peas, cut in half

Cook your spaghetti squash and squeeze out all of the liquid.

Mix soy, vinegar, garlic, ginger and sriracha in a bowl.

Add chicken and veggies to a hot pan. Cook briefly.

Add sauce and squash back into the pan and mix well.

Garnish with chopped peanuts.
