Spaghetti Squash Shrimp Scampi

Yields4 Servings

 4 cups cooked spaghetti squash
 1.50 lbs cleaned shrimp
 juice of 1 lemon
 1 onion, chopped
 2 tbsp white wine
 3 cloves of minced garlic
 2 tbsp butter substitute
 ½ tsp salt
 ½ tsp pepper
 1 tbsp grated parmesan cheese

Get a skillet hot and coat it with nonstick cooking spray. Add onion and garlic and cook just until it is soft.

Add wine, juice, salt, pepper and a splash of water.

Toss in your shrimp and cook just until they are done.

Stir in your butter and parmesan. Serve over spaghetti squash.
