 2 eggs
 1 oz diced chicken
 1 oz shredded cheese
 2 tsp hot sauce or taco sauce
 1 low carb tortilla
 1 tbsp sliced green onion

Beat your eggs and pour them into a hot pan that has been lightly coated with nonstick cooking spray.

Add chicken, peppers, sauce and cheese to the top. Add a tortilla on top of the egg.

Cook until the eggs are set. Fold in half. Crisp each side of the quesadilla over medium heat until each side is golden brown.
