Street Taco Chicken Bowls

 2 cups cooked riced cauliflower
 2 lb. chicken breast
 1 tbsp. lime juice
 1 tsp. taco seasoning
 1 tsp. salt
 ½ cup Pico de Gallo
 2 oz. crumbled cotija cheese
 ¼ cup chopped cilantro
 ¼ cup low fat ranch dressing

Marinate your chicken breast in the lime juice, salt and taco seasoning.

Either grill or saute until they are done. Dice them up.

Layer your bowl with riced cauliflower, chicken, pico, ranch cheese and cilantro. Add some hot sauce for some extra kick!
