Add all your cookie layer ingredients (except chocolate chips and water) and blend until a dough forms. If it is dry and crumbly, add a tsp. of water at a time and blend until it forms the dough.
Remove and stir in chips. Split into 8 balls, and form cookies but leave a well for the filling.
Now let’s make that protein pb layer. Add all the dry ingredients into a bowl for your filling and mix to avoid clumping, add the water a little at a time until it looks like soft dough. Add that pb layer to each cookie.
Then melt your chocolate chip and coconut oil and then drizzle on top of the cookies. Let them chill until they are well set.
