Sweet Potato Crustless Pie

 2 medium sweet potatoes
 4 eggs
 1 cup almond milk
 1 scoop vanilla protein powder
 2 tsp. vanilla
 ½ cup Splenda
 1 tsp. pumpkin pie spice
 pinch of salt
 sugar free Cool Whip and cinnamon for garnish

Clean and wrap your sweet potatoes in foil Bake at 350F until they are soft. Mine took about 50 minutes. Allow to cool and remove skin.

Blend your potatoes until very smooth. Add the remaining ingredients and blend again.

Pour into 6 small ramakins that have been sprayed with non-stick cooking spray. Place them in a pan that you can place some water around while baking.

Bake at 350F for 35 minutes or until center is set. I garnished mine with sugar free cool whip and cinnamon.
