 1 small sweet potato
 ½ cup lowfat cottage cheeseĀ 
 ½ tsp cinnamon
 ½ cup blueberries
 1 tsp sugar free honey alternative

Boil your sweet potato for about 10 minutes and allow to cool.

Slice it into 4 slices.

Toast each slice in the toaster until it is cooked through.

Mine took 3 times.

Top it with cottage cheese, cinnamon, berries and a drizzle of the honey alternative. I used Truvia Nectar.
