Cut your chicken into small pieces and sauté in a pan. Season with salt and pepper.
Remove the chicken and sauté your diced onions, bell peppers, garlic and ginger until the vegetables are soft.

Stir in your coconut milk. Spiralize your zucchini or cut it into chunks and add it to the soup.
Cook for another 15 minutes. Garnish with cilantro.
