Add your garlic, pb, soy, splenda, lime juice, and cilantro to the slow cooker. Mix well.
Add chicken, onions and pepper (all in one inch cubes). Stir again. Cook on low for 4 to 6 hours.
Use a vegetable peeler and peel ribbons of zucchini until the seeds are showing. Do not use the seeded area. Add them to the crock pot and stir.
Cook an additional 30 minutes.
Garish with cilantro and peanuts.
