Tortilla Breakfast Pie

 1 large low carb tortilla (10 inch)
 6 eggs
 ½ cup cottage cheese
 1 cup fresh spinach
 1 cup sliced mushrooms
 ½ lb. turkey breakfast sausage (cooked and crumbled)

Spray a pie pan with non-stick cooking spray. Add the tortilla.

Add your cooked sausage, spinach and mushrooms. Season with salt and pepper.

Beat your eggs with the cottage cheese and pour over the mixture over the pie.

Bake at 350F for about 25 minutes or until the center is set.
