Slice your eggplant and zucchini long ways. Season them with salt and pepper and grill them (this will prevent a runny final product).
Brown your turkey with your garlic, diced onion, diced pepper, and mushrooms. Drain any liquid and add your marinara.
Layer your eggplant, then sauce, then cheese and then start over with a zucchini layer. You should do this 4 times, keeping each layer thin and ending with cheese.
Bake on 350F for 50 to 60 minutes.
