 2 zucchinis
 9 eggs
 2 oz diced ham
 2 oz shredded cheddar cheese
 salt and pepper

Slice your zucchini into sheets with a mandolin slicer, or very thin circles.

Using an oversized muffin tin, line each one with the thin layers of zucchini.

Add your ham and cheese into each one.

Beat eggs well, and add salt and pepper.

Pour it into the cups, bake at 325 for 20-22 minutes until cooked through.
