Zucchini Parmesan Fritters

 2 cups shredded zucchini (all water squeezed out)
 ½ tsp salt
 ¼ cup coconut flour
 ¼ cup shredded parmesan cheese
 1 egg
 1 green onion, thinly sliced
 1 clove of minced garlic
 ¼ tsp black pepper

Mix your ingredients well.

Use a small amount of non-stick cooking spray in a pan and drop spoonful's of the mix in.

Cook until golden brown on each side. You can make 8 medium sized fritters.
