Ingredients

2 cups oats
½ cup mini dark chocolate chips
½ cup unsweetened coconut
3 scoops vanilla protein powder
2 tbsp chia seeds
¼ cup almonds, chopped
¼ cup coconut oil
¼ cup almond butter
2 tbsp honey

Directions

Mix together oats, chocolate chips, unsweetened coconut, vanilla protein powder, chia seeds, and almonds. Set aside.

Melt coconut oil in the microwave for 45 seconds.

Add almond butter and honey to the coconut oil. Mix well.

Gradually add dry ingredients to the wet ingredients, mixing with your hands until everything comes together.

Add additional honey or almond butter if the mixture is dry and not sticking together.

Shape batter into 18 balls with your hands or with an ice cream scoop.

Chill in fridge until balls are solid and hold their shape. Enjoy!
