Quinoa is a healthy starch that will keep you full for a while. Check out this yummy quinoa salad!

Ingredients

2 cups quinoa
1 red bell pepper, diced
1 can black beans, drained and rinsed
½ cup corn
1 tsp taco seasoning
juice of 1 lime
green onions, to garnish

Directions

Prepare quinoa as per the package instructions and allow to cool slightly.

Mix red bell pepper, black beans, corn, taco seasoning, and lime juice into the quinoa. Stir well.

Garnish with green onions.
