Ingredients

2 cups oats
2 scoops vanilla protein powder
4 large granny smith apples, diced
¾ cup sugar free maple syrup
1 tsp. baking powder
2 tsp cinnamon
½ tsp salt
2 large eggs
2 cups almond milk
1 tsp. vanilla extract
cup pecans

Preheat your oven to 325F.

Spray a 9x13 baking dish with cooking spray. Place your syrup, eggs, milk, protein and vanilla in a blender and blend very well.

In a bowl add the remaining ingredients and stir well to create your batter. Pour in into your pan. Sprinkle pecans on top.

Bake 40-45 minutes or until the center of the casserole is set.

Serve with whip cream or a drizzle of sugar free maple syrup.
