Ingredients

2 eggs
1 tbsp cottage cheese
½ cup raw vegetables (I used red onion, asparagus, mushrooms and bell pepper)
Salt and pepper
Nutrition facts very based on the vegetables you choose!

Directions

Spray a hot skillet with non-stick cooking spray.

Then add your vegetables with salt and pepper.

Saute them quickly until they are almost done and push them to the outer edges of the pan.

Add the eggs to the cottage cheese and whip until they are light and fluffy.

Add them to the middle of the pan and scramble them well.

Stir the vegetables back into the eggs and enjoy!
