Ingredients

1 scoop vanilla protein powder
¼ cup pumpkin puree
1 tsp cashew butter
3 tbsp unsweetened almond milk
½ tsp cinnamon
6 drops of liquid stevia
1 tsp instant coffee
1 tsp instant sugar free vanilla pudding mix
¼ cup almond flour

Directions

Mix all ingredients until very well incorporated in a blender or a bowl.

Spray a mug lightly with non-stick cooking spray and transfer the batter into the mug.

Microwave the mug cake for 60 seconds and check to see if it is done.  If it is not done (insert a toothpick and see if it comes out clean), then continue to microwave in 15 second intervals until it is done.

Garnish with whip cream and a drizzle of sugar free caramel if desired.
