Preheat oven to 425 degrees.
Use a spoon to hollow out seeds and some of the insides of the zucchini.
In a hot skillet with some olive oil saute onions, when the onions start to soften add the insides of the zucchini.
Place a large pot of water to boil. Once it is boiling blanch the hollowed out zucchini. Place in a 9X13 baking pan.
Once the zucchini, onion mixture softens add garlic saute for about 30 seconds, add diced tomatoes and saute until warm.
While the mixture is sauteing, cut up smoked sausage and add it to the zucchini shells.
Top with the onion/tomato/Zucchini mixture. Sprinkle with the bread crumbs, and top with cheese.
Bake 20 to 30 minutes.
