Beat your eggs with a sprinkle of salt and pepper and set them to the side.
Saute your spinach and garlic with a little olive oil, salt and pepper quickly. Remove it from the pan.
Now pour your eggs in and make them into the round omelette shape.
Flip it over and cook until you see bubbles. Transfer it to a plate and fill it with the spinach and goat cheese.
Toss your tomatoes with olive oil, basil, salt, and pepper. Top your omlette with the tomato salad.
